Keto Microwave Bread
Making bread in the microwave may sound weird, but it is something you have to try before you dismiss it. Many people miss bread when they first start a keto diet, so the fact that this delicious keto mug bread can be made in just a few minutes can be a huge relief.
Don’t Have a Microwave?
Not to worry! You can still make this recipe even if you don’t have a microwave. Follow the recipe the same way as described below, but instead of microwaving it, you can bake it in the oven for 20 minutes at 350 degrees F. The truth is it will probably taste even better fresh from the oven.
Make a Bigger Batch
If you want to make a larger serving of bread at one time, the cooking time will increase. A standard size mug bread will take between 70-80 seconds, but if you want to make a double batch it may take closer to two minutes in the microwave.
Coconut Flour vs. Almond Flour
A question we always get asked is if you can substitute between these two keto friendly flours. Typically you are best served by not trying to make the swap because coconut flour is much more absorbent than almond flour. That being said, to make this recipe using coconut flour, try using just over 1/2 cup in place of the 2 cups of almond flour.

Hi Megha & Matt! Had a quick question: I found that making freshly ground Psyllium Husk and Flaxseeds into powder, each became pretty moist so I was naturally worried this bulk mixture would start to go bad pretty soon ? Or start to get moldy. What would you suggest? Keeping everything in the freezer until use? Just ground up everything with my smoothy machine – so it would be great if you reply soon. Thanks a bunch for any advice. Cheers, Victoria
I have tried a few different one minute breads. This is the best! I was hesitant to commit 2 cups of almond flour etc not knowing if I would like it. Made a batch at my friends house today. After I came home I made a batch for my house. Thanks for the recipe:)
Hi
Just tried this bread, and my microwave gave out as I melted the butter,so decided to bake it in the oven, although not necessarily cooked as recommended, OMG still delicious thankyou so for this recipe I have been missing my morning toasted muffin and it really hit the spot, not eggy, full of texture and flavour yummy !! even baked extra for tomorrow morning, ready to toast and have with a cup of tea xx
I’m allergic to psyllium husk. What can I substitute for it?
You might be able to achieve a similar effect with flax meal
This recipe is so far superior to the one using only almond flour, egg, butter and baking powder. The addition of the fibrous ingredients gives it much much better texture and less of an eggy taste. In fact, I’m not really tasting egg at all as I sit here eating my egg, cheese and turkey sausage muffin. I made the bulk recipe and great idea! I toasted this, and it actually toasted. Tho I know grilling it in a little butter would also do well. Hello tuna melt….thanks for another great recipe.
Have you tried toasting the finished product?
Yes, it does well toasted when sliced.
is this correct that one serving of this recipe (1 microwave bread) is 323 calories?
Yes, but you can slice it into two pieces if you want less calories.
dswlife@yahoo.com. Great ?
Hi. What’s the purpose of using Psyllum Husk in this recipe? Can i omit it totally? If not, what is a great alternative? Thanks.
Psyllium husk is used to provide a more bread-like texture. You could omit it but it might make the texture a little more eggy. You could use flax meal or oat fiber maybe in it’s place but the texture would still be affected.
Just made one – OMG so good!
Thank you for a quick and easy receipe. I made this in the morning in less than 5 mins. I ended up toasting my bread and then topped it with cream cheese and smoked salmon. Delicious breakfast!
If you haven’t tried folding in an ounce of blueberries before cooking, OMG YOU MUST. +3 carbs, and +100 to breakfast craving satisfied. This is so versatile, and I’m so thrilled to have this recipe. Thank you!!
Didn’t you revise the dry-ingredients mix to accommodate your (Megha’s) tree-nut allergy, substituting coconut flour, as requested below, or am I mistaking that for your keto-revision of Red Lobster’s cheddar biscuits? Having a coconut-flour-based mix on hand would be super-convenient. I’m new to your channel but love what you’re doing – great information, demos, and recipes. Thanks for sharing.
The cheddar biscuit recipe is the best alternative to this almond flour based bread mix.
Can I use this recipe to make bagels with a denser texture? I love your keto bagels recipe but sometimes, I find it too cheesy if I want to have more than 2.
You could try it. I am not sure how it would turn out, but if you do, let us know how it went 🙂
pauladkw@gmail.com. 2 teaspoons for the whole mix seems wrong. I don’t see how that is enough without any added to mug.?
Have you heard that the omega 3’s in flax seed, once ground, become susceptible to oxidation damage? I’m not sure how quickly that happens, but it might be worth considering. Maybe storing it in an air-tight container in the freezer would help. Anyway – love this idea! Meal prep is a big key to my success, too.
Yes 🙂 most oils are prone to oxidation when exposed to air, light, and warmth. The best thing is to keep them in dark glass containers in a cool dry place.
Recipe notes say: nutrition reflects mug bread made. So these #s should reflect the calories/fat and carbs including the butter and egg. But the comments below are leading me to think this is not the case…can you clear this up please?
Thx in advance 🙂
The nutrition includes the butter, egg along with one serving (28 grams/ 1/4 cup) of the mix.
Hello. It tastes great. But the nutrition info for one serving is just for the dry mix right? Because adding the butter and egg takes this to 325 calories
Hi Sara! It was for just the dry mix, but we have updated the nutrition information now to include the butter and egg. Thanks!
If I’m having trouble getting the psyllium Husks powder could i just use extra flax meal or almond flour in its place????
Thank
Melissa
Yes, you could try those things. Maybe even oat fiber. The texture might be different depending on which substitute you use.
how can there be only 159 calories when there is 175 with egg and butter alone?
thx
That was the nutrition information for just the dry mix. We have updated and corrected the nutrition information to reflect the inclusion of butter and egg. The nutrition information now reflects the mug bread made.
