Keto Microwave Bread
Making bread in the microwave may sound weird, but it is something you have to try before you dismiss it. Many people miss bread when they first start a keto diet, so the fact that this delicious keto mug bread can be made in just a few minutes can be a huge relief.
Don’t Have a Microwave?
Not to worry! You can still make this recipe even if you don’t have a microwave. Follow the recipe the same way as described below, but instead of microwaving it, you can bake it in the oven for 20 minutes at 350 degrees F. The truth is it will probably taste even better fresh from the oven.
Make a Bigger Batch
If you want to make a larger serving of bread at one time, the cooking time will increase. A standard size mug bread will take between 70-80 seconds, but if you want to make a double batch it may take closer to two minutes in the microwave.
Coconut Flour vs. Almond Flour
A question we always get asked is if you can substitute between these two keto friendly flours. Typically you are best served by not trying to make the swap because coconut flour is much more absorbent than almond flour. That being said, to make this recipe using coconut flour, try using just over 1/2 cup in place of the 2 cups of almond flour.

Keto Mug Bread
What You Need:
- Microwave
Ingredients:
Dry Ingredients
- 3 1/2 tbsp almond flour
- 1 tsp psyllium husk powder
- 1/2 tbsp ground golden flaxseed meal
- 1/4 tsp baking powder
- 1/8 tsp Pink Himalayan Salt
Wet Ingredients
- 1 tbsp butter
- 1 large egg
Instructions:
- Add 1 tbsp of butter to a microwave safe bowl. (We use a coffee mug for this single serving recipe) Microwave for 15-30s or until butter is melted.
- Add the almond flour, psyllium husk powder, ground flaxseed meal, baking powder, salt and an egg. Mix it thoroughly with a fork until uniform.
- Microwave on high for 70-80 seconds. Eat is as is or flip onto a plate and slice in half to use for a sandwich or side to your meal!

Ugh I made this and it tasted horrible! The golden flax meal flavor over powered everything. I had to throw it out. I’m mad I made it all in bulk now I don’t know what to do with it.

I make this bread a lot and use it to make sandwiched. Has anyone tried using this bread for grilled sandwiches?
I made this today and it was really good I used organic ground flax seed from Walmart and regular salt because I was out of pink salt. I also added a little bit of water I thought it was a little dry. Than I served it with 1/2 tablespoon of butter with a side of eggs and bacon. The macros I got with the egg and extra butter included were about 35g for fat 8.6g carbs 5.2g fiber 12g protein 378 calories just in Case your curious
Please keep in mind that the nutrition info is for JUST the mix. After the egg and butter is added. I put it in the My Fitness Pal app and a serving of this bread weighs in at 322 calories per serving. I toasted it and used it in a egg and bacon sandwich. Great bread substitute.
Thank you SO MUCH for this recipe! As an Aussie on keto, one thing I miss is Vegemite on toast! I cut the bread in half and pop in into the toaster to crisp it up then slather with butter & Vegemite while still hot! This and a cup of black tea… Heaven!!! ?

I added 1/8 tap vanilla, one package sweetener, and twelve mini chocolate chips. Microwaved 70 seconds. Wonderful dessert. I am thinking of using cinnamon and crasins instead of the chocolate for a breakfast type pastry.

The link for the flaxseed meal brings you to flax seed on Amazon. I just hit it and ordered and now I have a $ 28 for pack of 24 oz of flaxseeds that I cant return 🙁
You can simply grind it in a blender or coffee grinder!

I’ve never heard of golden flax meal and can’t find it at my neighborhood market. I have some ground flax/chia blend on hand — can I substitute it? If so, same amount?

I’ve tried the mug bread 2 times and both are a fail. I followed your recipe exactly. It looks to be that the mixture is too dry. Help.

Can I double this recipe and microwave it? I used 1 C almond flour and 1/4 C coconut flour. It turned out AWESOME!
