Keto Microwave Bread
Making bread in the microwave may sound weird, but it is something you have to try before you dismiss it. Many people miss bread when they first start a keto diet, so the fact that this delicious keto mug bread can be made in just a few minutes can be a huge relief.
Don’t Have a Microwave?
Not to worry! You can still make this recipe even if you don’t have a microwave. Follow the recipe the same way as described below, but instead of microwaving it, you can bake it in the oven for 20 minutes at 350 degrees F. The truth is it will probably taste even better fresh from the oven.
Make a Bigger Batch
If you want to make a larger serving of bread at one time, the cooking time will increase. A standard size mug bread will take between 70-80 seconds, but if you want to make a double batch it may take closer to two minutes in the microwave.
Coconut Flour vs. Almond Flour
A question we always get asked is if you can substitute between these two keto friendly flours. Typically you are best served by not trying to make the swap because coconut flour is much more absorbent than almond flour. That being said, to make this recipe using coconut flour, try using just over 1/2 cup in place of the 2 cups of almond flour.

Keto Mug Bread
What You Need:
- Microwave
Ingredients:
Dry Ingredients
- 3 1/2 tbsp almond flour
- 1 tsp psyllium husk powder
- 1/2 tbsp ground golden flaxseed meal
- 1/4 tsp baking powder
- 1/8 tsp Pink Himalayan Salt
Wet Ingredients
- 1 tbsp butter
- 1 large egg
Instructions:
- Add 1 tbsp of butter to a microwave safe bowl. (We use a coffee mug for this single serving recipe) Microwave for 15-30s or until butter is melted.
- Add the almond flour, psyllium husk powder, ground flaxseed meal, baking powder, salt and an egg. Mix it thoroughly with a fork until uniform.
- Microwave on high for 70-80 seconds. Eat is as is or flip onto a plate and slice in half to use for a sandwich or side to your meal!

SO good! I’ve made this twice now: the first time I added some cinnamon (maybe like 1/4 tsp or so) and a few drops of liquid stevia to the batter, then sliced and buttered it hot out of the microwave and it tasted just like French toast! The second time I let it cool a bit after coming out of the microwave, then sliced and griddled the halves in butter until golden-brown, and topped them with almond butter, which was a super satisfying breakfast! Thank you so much for the dry mix in bulk–makes it so quick and easy to throw together, and I imagine I’ll be keeping this dry mix on hand pretty much constantly from now on.

Hi gang! Long time fan here 🙂 I have been searching to find the last mug cake recipe you had a couple months ago, which i LOVE: it calls for baking soda, almond flour, , (NO husks or flax), and then I can’t remember what else. Do you know the one I mean and if so could you please post it or send it to me?!
Also— yes you can totally make these in a toaster oven! I use silicone muffin cups or a cute tiny cake pan.

Hi, this is what I did to replace the egg- added some dry coconut milk powder to the mix, and a large splodge say about 3tbsps of pumpkin purée when baking. It’s a bit dense, but so good to have something “bready” for breakfast. Thanks for the simple recipes you keep posting
