Modifying to Suit Your Diet
This recipe can easily be tweaked based on your preferences and requirements. If you want to increase the protein and fat you can add fillings like egg, sausage and cheddar cheese.
If the calories are a bit high, you can always have just one egg as a topping, or even go for one slice over two without worrying that you’ll miss the egg sandwich experience altogether.
Got nut allergies? No problem – this recipe doesn’t use any almond flour, but they’re still nice and fluffy like bread thanks to the baking powder. However, if you don’t use baking powder, your slices may be more flat and dense.
Low Carb Bread Options
While many recipes (including this one) include a skillet option, Matt loves to start his keto breakfast sandwich off with an easy mug bread. Less hassle and clean up. However, my preferred route would be baking a fresh loaf of keto bread, slicing it up and toasting some to get the sandwich ball rolling.

Keto Breakfast Sandiwch
What You Need:
Ingredients:
Mug Bread
- 1 tbsp butter
- 2 tbsp coconut flour
- 1/2 tsp baking powder
- 1 tbsp heavy cream
- 2 tbsp water
- 1 large egg
Sandwich
- 4 slices bacon
- 2 large eggs
- 2 slices cheddar cheese
Instructions:
Mug Bread
- Place butter in a large mug and melt in the microwave on high for 30 seconds.
- Add the remaining ingredients and whisk together using a fork. Microwave on high for 90 seconds to 2 minutes until fully cooked through.
- Allow to cool and then remove to a cutting board. Slice in half and set aside as you cook the remaining ingredients.
Sandwich
- Cook bacon in a large skillet over medium-high heat and then transfer to a paper towel lined plate to drain.
- Turn the heat down to medium and crack two eggs into the skillet. Cook until desired done-ness (we recommend over medium).
- Assemble sandwich: Place one slice of cheese on one half of bread, top with two slices of bacon, one egg, the remaining bacon and egg and finally the second slice of cheese.
- Serve immediately.
- Note: You can use the biscuit recipe provided above and in the recipe video or try our Keto Air Fryer Biscuits as seen in the photos. Feel free to make two sandwiches out of this recipe! Matt likes to make "big boy" sandwiches and double the ingredients called for in one sandwich!
I replaced the heavy cream with the same amount of butter, I put some salt in it, and I used two small eggs instead of one big egg, and I could slice it into three slices, I made it in a ramekin. The taste is good, the salt took away the taste of coconut, so this is a win recipe for me, I hate other keto breads because they’re too eggy.
I thought this recipe would look like the bread in the picture , like a “biscuit”, but it doesn’t at all. I even took it out after it was done cooking and toasted it and it still wasn’t like the picture. It tasted okay.

You could try a coconut cream/milk or other non dairy milk.
Made the breakfast Sand this morning using your biscuit recipe. It was awesome. Thank you so much for being here for me.
I made pancakes for my non keto family. I made just the “bread” part of this recipe for myself, threw in a few blueberries, and topped it with a little whipped cream sweetened with a touch of monk fruit. Wow. My breakfast life is changed forever.
I just wanted to leave a quick comment for people not wanting to use coconut flour. Almond cannot be swapped out at a 1:1 ratio as it isn’t nearly as absorbent as coconut flour. You would need to double or triple the flour (and it will be crumbly). I used oat fiber as a substitute and just left the water out and it worked well. Oat fiber is also very absorbent. Next time I may add just a little almond flour for texture. Just remember, no matter what you sub, the macros will change if you are tracking them.
I don’t have heavy cream. Could I use skim milk?
Finally a breakfast sandwich for my husband! The mug bread comes out perfect every time!
This does not come out looking anything like the photo. The photo is misleading. It did taste like coconut, maybe with half almond flour it would be less coconutty. Also, I didnt.add another egg because it was pretty eggy as it was.
For those not wanting to use the microwave, I used my mini waffle maker and they came out great. 2 waffles per recipe for 1 sandwich.
The bread/roll in the photo, has that been air fried or oven baked???

How Can you bake this because the sides of your biscuits are brown? so how are you able to bake it and have it brown on top and the sides? I really like Keto basically everything.

The biscuit in the picture appears to be from their Air Fryer Biscuits recipe. You don’t actually need an air fryer though as you can bake them between 350-375 for 15-20 mins depending on your oven. I prefer the biscuit over the mug bread here. The mug bread is just really fast if you are in a hurry.
I have a question. The Breakfast sandwich recipe that you just emailed out, it talks about cooking it in a mug. However, I can see lines from a muffin paper? Did you use something besides a mug to cook it in?
