Honestly, you can pile meat, cheese and sour cream on anything and I’ll eat it, so we’ve got a variety of ways you can make this recipe.
Easy Low Carb Appetizers
These keto nachos would definitely be the show stopper of any party you throw, but you shouldn’t stop there. Put some extra tortilla chip on a plate along with pork rinds, and veggies and serve them up alongside these easy keto dips!

Are Nachos High In Carbs?
Not these ones! You can go the classic chip route and make some tortilla chips in the oven using low carb tortillas or pull out your bag of pork rinds and use them as your bottom layer. Either way, you can’t go wrong.

Can You Eat Nachos On A Diet?
Normally, I would say they aren’t ideal because they are very palatable making them easy to consume in bulk. However, these keto nachos are the perfect dinner – high in fat and protein and low in carbs!
It’s all about the toppings because no matter which way you play it, low carb tortillas, pork rinds or bell pepper strips (as shown in the video), the base is going to be very low carb! Some great ways to ensure you are getting in a good ratio of fat to protein and having a filling dinner is to start with 80/20 ground beef.
Next, I like to add a solid layer of cheese, tomatoes, sour cream and guacamole. Minimal carbs there, and you can even omit all veggies if you want to keep it super low carb.
Make Low Carb Tortilla Chips
- Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.
- Cut your low carb tortilla up into triangles and place them onto the baking sheet so they aren’t touching one another.
- Spray them with coconut oil spray and bake for 5-7 minutes (watch them because they will burn quickly if left unattended).
- Turn the heat to broil for 1-2 minutes, while keeping an eye on them, for a crispy, browned tortilla chip.
- Best stored in a zip top bag on the counter.

What You Need:
Ingredients:
Chips/Pork Rinds (base layer)
- 3 small low carb tortillas
- 4 oz pork rinds
Ground Beef (middle layer)
- 3/4 lb ground beef (80/20)
- 1/4 small red onion, diced
- 1.5 tsp red chili powder
- 1.5 tsp ground cumin
- 3/4 tsp garlic powder
- 1/2 tsp pink himalayan salt
- 1/2 tsp onion powder
- 1/4 tsp red pepper flakes
- 1/4 tsp black pepper
Toppings
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced tomatoes
- 1/4 cup black olives, sliced
- 1/4 cup sour cream
- 1/2 large avocado, diced
Instructions:

Ground Beef
- Heat a large skillet to medium high heat and add the beef and onion.
- Break up the meat using a spoon and cook through until no longer pink and the onions are tender.
- Add all of the seasonings and combine until fully incorporated.
- Remove from heat and set aside.
Make Your Nachos:
- Create a layer of your baked tortilla chips or pork rinds in an oven safe skillet.
- Top the chips/pork rinds with the meat and then with the cheese and diced tomatoes.
- Broil for 1-2 minutes until cheese has melted.
- Top with remaining toppings and serve immediately.
