Everyone has tried or at least heard of keto coffee. It has revolutionized the ketogenic diet and is loved by millions of people. There are tons of great benefits to it and it helps you start your day off with a good amount of fat. But, what about those summer days or those days you don’t want a hot beverage. Personally, I prefer ice coffee all year round! Well, we’ve re-revolutionized the coffee game with our Keto Coffee recipe.
Bulletproof Coffee
What makes our Keto Coffee so different from the standard bulletproof coffee is not only the iced factor. We use MCT oil and heavy whipping cream to create the creamy, fatty aspect. The great thing about MCT oil is that it doesn’t solidify when cold unlike butter and coconut oil would. You won’t have any fat chunks in your keto coffee!
Keto Iced Coffee
This isn’t your average iced coffee. We’ve used a special ingredient, also known as the X factor in our house, to create a thicker, frothier consistency. This optional, although highly recommended ingredient is xanthan gum! If you haven’t used it before you’re missing out. It;s used as a thickening agent and works great for soups and gravies, and who doesn’t like both of those things?
Keto Coffee
Warning: If you’ve never used MCT oil before we highly recommend starting at a lower dose than what is called for in the recipe. We would even suggest starting with 1 to 2 teaspoons and seeing how your body handles it. It can cause digestive issues and discomfort at the start. To make up for it you can just increase the amount of heavy whipping cream. If you’re a caffeine addict or just love the taste of coffee you should give our Bulletproof Coffee, and for a little fun, our Irish Coffee (alcoholic) a try. But if you ask Matthew and I which is our favorite we would pick Keto Coffee every time!
Additional Ingredient Options
- Sea Salt – The perfect addition to hot or cold bulletproof coffee. It brings out the creamy flavors in the drink as well as adding some much needed sodium to your keto diet.
- Collagen Peptides – Along with adding a host of health benefits, these will also make your keto coffee extra thick and creamy.
- Sweeteners – The 2 best options for sweetening this iced keto coffee are flavored sweet drops or sugar free flavored coffee syrups. A little can go a long way towards making your keto coffee a sweet treat!

Keto Coffee
Ingredients:
Basic Iced Keto Coffee
- 12 oz Coffee
- 2 tbsp MCT Oil
- 2 tbsp Heavy Whipping Cream
- 1 cup Ice
- 1/4 tsp xanthan Gum
Optional Additions
Instructions:
- Make coffee and place in fridge for as long it takes to get cold. You can also make it the night before so it's ready to go in the morning.
- Add cold coffee and the rest of the ingredients to a blender and combine until frothy. **Use less than 1 tbsp of MCT Oil if you have not built up your tolerance to it!!**
- Pour into a glass and enjoy!

I love iced coffee, especially in summer. Blended is fantastic.
Can you recommend a starting amount for the sweet drops? I haven’t used Stevia drops before. For instance, how much do you put in YOUR coffee? I know everyone’s tastes are different, but I could use that as a starting point. I have vanilla, chocolate, and unflavored.

Mine came out terrible. I used everything except for the MCT oil because I don’t have any. I use these skinny syrups in vanilla. Mine just did not taste good and I added one splenda. Was it perhaps the Xantham gum?

Xanthum gum doesn’t really have any flavor. It just thickens it. So if it was an issue with texture it was that. If it was the taste that was bad, definitely the syrup. I have found with Skinny Syrups there is a VERY fine line between “Can’t even taste it” -> “Coffee Heaven” -> “OMG, ewww, I can’t even drink this”. VERY fine. I highly reccomend getting a pump for the bottle if you don’t have one yet. They make it much easier to get the exact amount every time once you find your sweet spot (pun inteneded). Maybe also try some different flavors. I wasn’t a big fan of the vanilla, but I loooooove the salted caramel and caramel fudge waffle cone.

Sucralose does not spike blood sugar or kick you out of ketosis, so it is keto friendly.

You can thicken coffee by blending an avocado in it.. It thickens it and adds healthy fat. Also some mct oil is just coconut oil. Technically the c12 in coccinellids oil is a mct but doesn’t have the big health benefits that might be why it clumped up on the one person. Lol for the stuff that is c8 and c10
