We’ve been attempting to make a simple yellow style cake for a long time now. It’s surprisingly hard as you can imagine, but this Breakfast Bundt Cake solves all our problems! It’s a simple cake base that you can flare up to your liking. Maybe a brown butter, cinnamon frosting? Or, better yet, add some nuts and berries to the batter for a fun twist.
Vanilla Bundt Cake Recipe
We wanted to keep it as simple as possible for this recipe to showcase the cake itself. Sure, we could have made it a cinnamon swirl cake or gone crazy with the nuts, but we wanted to leave the fun part up to you! Sometimes all you need is a good cake base and your imagination. Some delicious ways to jazz this recipe up:
- Chocolate cake with peanut butter swirled in or as a frosting.
- Cinnamon sugar cake with walnuts and a vanilla glaze.
- Lemon poppy-seed Cake (great for breakfast).
- Berries and cream cake (raspberries in the cake batter and a whipped cream topping).
As you can see the possibilities are endless, so have a little fun!

Use this simple, delicious cake base to impress your family and friends and tailor it to your liking with additions or toppings! If you plan on storing leftovers in the fridge I would highly recommend you reheat it in the microwave. This breakfast bundt cake is pretty dense and can firm up, especially in the fridge, so a quick heating through will bring the moistness back to life!

Breakfast Bundt Cake
Ingredients:
- 1.5 cups Unflavored Protein Powder
- 1 cup almond flour
- 5 large eggs
- 1/2 cup butter
- 1 cup Low Carb Sugar Substitute
- 2 tsp baking powder
- 1/4 tsp Pink Himalayan Salt
- 1/2 cup flax milk
Instructions:
- Preheat your oven to 350 degrees and grease a 10-12 cup bundt pan with coconut oil spray.
- Melt the butter in a large mixing bowl and combine with the eggs, flax milk, baking powder and pink salt using a whisk to combine.
- Add in the protein powder, almond flour and erythritol and combine once more until uniform in consistency.
- You should be left with a thin batter consistency. If desired add in other spices, nuts, seeds, but note that the nutrition will change.
- Bake for 32-37 minutes until the top has risen and browned.
- Allow to cool for 15 minutes before flipping over. Enjoy!
- Store in a sealed container in the fridge for best keeping up to 7 days.

Can I substitute a portion of the erythritol for stevia? I get that cooking affect with to much erythritol.

I agree that flax milk taste the closest to regular milk. If you can find it, I’d use the flax milk. I hope to make this recipe once I get home.
Do you recommend a specific protein powder? I’m not a big protein powder person cause of the chalkiness but if its acting like the flour I’ll give it whirl. Since I don’t have any unflavored powder can you please suggest one?

Yes cupcakes should work fine, bake for 15-20 minutes or until a toothpick comes out clean.

Can it be baked in 8 x8 pan?
Yes, you don’t have to use a bundt pan. Whatever pan it will fit in should work fine!
I am not an experienced cook so when you talk about add ins I really need to know measurements for the add ins. I know the composition can be effected if too much or too little is added. Can you help me out with that?

Has anyone tried coconut flour instead of almond flour?
I have been following KC for quite a while now and this was the first time I actually made a recipe! I made this cake with chocolate peanut butter whey isolate. It turned out absolutely delicious! I followed the recipe the same way Megha made it in the youtube video. SO GOOD.

I actually just made this cake today. I followed the recipe exactly (or to the best of my ability) and it came out more bready than cakey. Could it be because I subbed with coconut milk? The same thick, almost griddy texture happened with the brownie recipe from this website as well. I’m new to keto and was kind of expecting similar results to an actual cake and brownie, and maybe that’s the problem. I don’t know what I am doing wrong if the recipes are coming out as I described 🙁
Is it possible to bake this in a loaf pan if I don’t have a Bundt pan? I know it defeats the purpose of it being a Bundt Cake, but I want to make this soon and don’t have one on hand! If so, any changes needed for bake times?
Yes, you can make it in any pan! Start with 15 minutes and keep an eye on it as it bakes. It will be done when the top is golden and a toothpick comes out clean. 🙂
