Since this waffle iron has been a long time coming, we decided to make it a part of our house warming series. Watch me make them below!

Since getting my waffle iron, I have made countless waffle recipes, from ones I found online to my own creations. However, this is by far the best one. It's indulgent, has a rich chocolate flavor and that perfect waffle texture. The ones I've tried are either too soft, even mushy, or completely dried out. These waffles can be eaten without any syrup or butter and you won't have a dry throat afterwards. They are moist and rich in flavor. What more can you ask for?!
Our Best Keto Recipes
I definitely think this low carb waffle recipe is one of our best keto recipes. It is one I can eat at all times of days and can even be made into pancakes for those without a waffle iron. Low Carb Waffles
Whether or not you have a waffle iron, you can make this batter into a delicious, chocolate-y breakfast, lunch or dinner! You can easily use the batter to make pancakes so you'll never miss out.
The waffle iron we have and I definitely recommend is the Oster 2000 - it was very easy to use even for a newbie like me! You can even make savory waffles, like the zucchini cheddar waffles we will be making for our cook book. Make these low carb waffles or pancakes next time you want to have a guilt-free, indulgent keto meal!

Low Carb Waffles | Double Chocolate!
Ingredients:
- 1/4 cup Unsweetened Cocoa Powder
- 1/4 cup Coconut flour
- 4 oz Cream Cheese
- 4 large eggs
- 2 tbsp Butter
- 1 oz Unsweetened Bakers Chocolate
- 1 tsp Baking powder
- 40 drops Liquid Stevia
- 1/4 tsp Pink Himalayan Salt
Instructions:
- Combine coco powder, coconut flour, baking powder and salt in a bowl and set aside.
- In another bowl add the cream cheese and microwave for 20-30 seconds until soft. Add the eggs and stevia to the same bowl and combine using a hand mixer.
- Add the dry ingredients to the wet ingredients and combine using hand mixer.
- Chop up the bakers chocolate and add to a microwave safe bowl. Add the butter to the same bowl and microwave for 40 seconds. Using a spoon combine until butter and chocolate are fully incorporated.
- Add the chocolate mixture to the batter and combine using a hand mixer. Pour 1/4th of the batter into the center of the hot waffle iron and close the lid. Repeat until all waffles are complete. Serve warm and enjoy!
- Store left overs in a ziploc bag in the fridge up to 10 days.
- NOTE: The batter will make 4 medium waffles!

I’m going through a lot of eggs with different recipes. Would these waffles turn out okay if I use the liquid eggs that are in the milk carton style container?

I hate to leave negative feedback, but these are just soooo bitter, I even added a tablespoon of swerve to the batter after I made the first waffle.

Made these today with kids for breakfast. They’re legit. I added a little powdered erythritol to bump up the sweetness and I topped them with warmed up frozen blueberries. I do a lot of keto baking but I’ve nit found a good waffle recipe until I tried this one and the protein one. Thank!

WOW! Absolutely delicious, they came out so moist and perfect. If I wanted a plain waffle, cos I can use these to make sandwiches, they’re better than bread. I would sub the cocoa powder for more coconut flour, do I just use half the amount of cocoa powder, so a half of a quarter cup of coconut flour? And then would I add 3 ounces of melted butter? Half of a quarter cup would be 2 tbsps, but you may want to try 1 tbsp first and check the consistency. If you are talking about substituting the butter for the bakers’s chocolate, you could try 3 tbsp, but if you replace two ingredients, it may come out a totally different consistency.

I made these for dinner last night and my daughter and I are in love. Did some tweaking to add Erythritol which we liked better. But hey, a huge win for us and an option as a sweet treat too. My issue is that Cronometer is trying to give these like 90 net carbs. Which is wrong, I know, but so annoying to try to work around that when I’m tracking so closely. Any suggestions?

It might work. It would have a different texture and outcome. You would have to use 3-4x more almond flour than coconut flour. We haven’t tried this so let us know if you do. 🙂

I just made these this morning n I love them!!! I think I dried them out by placing them in my toaster oven after but nothing that warmed butter couldn’t fix!

I tried these with Macadamia Nuts..l wouldn’t bother if I was you. Unless you are trying to add some nutritional element, there isn’t much value. the nut taste is too subtle to notice. A waste of Macadamia Nuts!

It could be from the aftertaste of Stevia – some people say it’s bitter. Or it could be you find the Bakres chocolate too bitter.

Replacing the bakers chocolate with lilys chocolate. Or adding more sweetener. You could try less bakers chocolate too, that’s where the bitterness is probably coming from.
