Funny story: I was in Wal-Mart the other day and saw that they had turned my favorite cookies, Nutter Butters, into a cereal! What?! It was then, in that moment, that I knew we needed a remake so I could enjoy Keto Peanut Butter Cookies without feeling like I’m missing out. These cookies may not taste exactly like nutter butters, and the reason is because they don’t have all the junk ingredients in them, but they are dang delicious!
Easy Homemade Nutter Butters
Peanut butter is on everyone’s favorite food list, unless you’re allergic, of course. In that case, I’m truly sorry for your loss! We also know that homemade is always going to be better. You have full control over the ingredients and if you’re feeding your family you have no reason to feel bad for feeding them with unnatural ingredients. These homemade nutter butters are going to the your kids or even your new favorite cookie to make and eat!

Keto Peanut Butter Cookies
These keto peanut butter cookies are minimal ingredients, maximum delicious and perfect for packing in lunch boxes and meal prep. If you don’t want to make the filling, these cookies are great on their own and will take you less than 30 minutes to whip up. Keto Peanut Butter Cookies
Ingredients:
Cookies
- 1 large egg
- 1 cup natural peanut butter
- 1/4 cup Low Carb Sugar Substitute
- 1/2 tsp vanilla extract
- 15-20 drops liquid stevia
Filling
- 1/4 cup heavy whipping cream
- 1/4 cup peanut butter
- 5 drops liquid stevia
- 1/4 tsp vanilla extract
Instructions:
Cookies
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- In a medium size bowl, add all the cookie ingredients in a bowl and mix them all together until it’s well combined.
- Roll the dough into 1 inch balls using a scoop or your hands.
- Place the balls of dough on a cookie sheet lined with parchment paper and press down balls until they are ~ ¼ inch think.
- Bake cookies for about 15 minutes or until golden brown.
- Allow them to cool down for about 10 minutes before removing them from the tray.
Filling
- In a large bowl add all ingredients except for the peanut butter. Whip until stiff peaks are formed.
- Add remaining ingredients to whipped cream and fold in until just combined.
- Divide whipped topping onto half of the cooled cookies and then top with remaining cookies.

This recipe didn’t turn out as I had hoped. The cookies were extremely crumbly. I wasn’t even able to make the full cookies. The cream filling was pretty tasty but would have liked a more solid cookie.
These are amazing! I ended up eating like 4 of them they were just so good. Thank you I’ll def be making these again soon.
I doubled the recipe and made big peanut shaped cookies. I undercooked them slightly so that they were soft and not too flaky. That and the recipe for the filling verbatim was absolutely perfect. Already making it for the second time.

I made the Nutter butter Peanut Butter cookies. I followed the directions exactly. However, they were very soft and crumbly! When i tried to put the filling in they fell apart. Good flavor. But had to pick up the crumbs with a spoon Definitely NOT a cookie success. 🙁
Very tasty, but I think next time I will make a pb frosting with Swerve confectioners sugar rather than the whipped cream based filling.
How do I substitute allulose?
I know the servings say sandwhich, but is the nutrition correct that its for 1 whole cookie sandwhich and not for just 1 cookie?

You’ll want to keep them in an airtight container in the refrigerator. Or you could try freezing a portion of the dough to pull out at a later date!
I tried looking through the comments to see if someone already asked this. Is the serving size for 8 sandwich cookies? Or just 8 cookies equaling 4 large sandwich cookies. Just want to be sure.

I personally like Splenda…I know it gets a bad rep…but I personally like the taste over erythritol and stevia. Does anybody know the ratio of Splenda to erythritol and stevia usage? That would help me TREMENDOUSLY. Thanks in advance ?
I am not exactly sure. I know swerve (which is erythritol) is almost a 1:1 ration with real white sugar. You can check out our sweetener conversion chart but it doesn’t include splenda
I’m going to try using swerve instead of stevia, I’m not fond of stevia after taste.
