Easy, Homemade Microwave Cake!
Aside from how simple this mixture is with only six ingredients, all it takes to make this is pouring the mixture into a mug, mixing in an egg and microwaving for 60 seconds. It will come out moist and delicious every time! This also makes for the perfect holiday gift - fill a cute mason jar and use twine to make a bow with a little note that says the directions!
Mug Cake Recipes
Although this is our only mug cake mix, this isn't our only mug cake recipe! We are 'famously' known for our low carb mug cake battle - nutritious vs. delicious! Matthew makes his typical protein powder mug cake, while I have my hand at the delicious version. It's easy to see who won that challenge! Both of our mug cake recipes use butter for a fat source in which you can swap out for MCT powder!
Chocolate Mug Cake Mix
This quick to make, convenient mug cake mix is possible because of Perfect Keto MCT Powder! When making any type of cake, fat is an essential ingredient. But, with the addition of a dry ingredient fat source you can easily make baked good mixes ahead of time and store for later use. The shelf life on the mix is also very long, staying fresh for up to six months.
Tip: To cook the perfect mug cake add 1/2 cup of mix to a mug, mix in an egg and microwave on high for 60-70 seconds. If you want a lave center microwave for 60 seconds and if you want a fully cooked mug cake cook for 70 seconds!

Chocolate Mug Cake Mix | Perfect Keto MCT Powder!
Ingredients:
- 8 scoops MCT Oil Powder
- 1/2 cup Almond Flour
- 1/4 cup Unsweetened Cocoa Powder
- 1/4 cup Low Carb Sugar Substitute
- 1 tsp Baking powder
- 1/2 tsp Pink Himalayan Salt
Instructions:
- Combine all the above ingredients into a mason jar.
- The mix makes 4 (1/2 cup) mug cake recipes.
- Store in seal-able container up to 6 months.
- Cooking: Pour 1/2 cup of mix into mug, add an egg and combine. Microwave on high for 60-70 seconds.
- Tip: 60 seconds will give you a slight lava center!

Maybe try 3 tbsps instead of 1/4 cup, but make sure to taste it and see if is chocolatey enough for you.

I was excited to try this until I actually looked at all of the products nutrition facts your numbers are very wrong using the listed products. Total calories 245, fat 22g, carbs 19.5g, fiber 2.5g, protein 4g per just the mixture serving. Erythrithol alone for a 1/4 cup is 48 grams of carbs. Even dividing that by 4 is 12 grams of carbs not even including the other products with their carbs.

Erythritol is not included because we count net carbs. Matt & Megha have personally tested it and it had little effect on their blood sugar and ketones.

Do you use the plain MCT Oil Powder for the mud cake mix or the chocolate flavor?

I think they used the normal kind with the chocolate flavor coming from the cocoa powder. I don’t see why you couldn’t use the chocolate flavored MCT powder for an extra chocolately cake. Give it a try and let us know how it is by commenting back here!

Hi! Just made one of these and it was amazing! However, I used butter instead of the MCT powder so I feel like it can’t be 1/2 cups of the mixture since it doesn’t include the 8 scoops of MCT powder it would be less. But I was having a hard time figuring out how much of the mixture to use without the MCT and using the butter afterwards.

Made this yummy mug cake the way the recipe is written then I decided to use my vanilla MCT Perfect KETO powder. I took out the Swerve. The cake came out so good. Topped it with some whipped cream and a few Lillys chocolate chips. My non keto family members loved it. Thanks!

About your answer, “1 scoop of powder is 1/2 tablespoon. So you’d need 1 tablespoon of coconut oil” is that for the entire recipe or we’ll need 4 tbsp for the whole recipe? I had to throw mine away because it was too salty, I used regular Salt.

Could you please let me know how much erythritol per serving? I’d need to calculate it to have the total carbs count done properly, even if I know that it’s generally considered unabsorbed (but personally I need to consider it some way). Do you ever omit it in carbs count or may it vary from time to time?

What is the reason for using MCT oil instead of butter? Is it just for the purpose to add fat in your overall diet, or does it in some way make the recipe taste better? Would Butter make it taste better or have a better texture, or would butter not be as good?

You could use butter if you weren’t mixing it into the jar as a bulk mixture. The MCT powder is nice because is it a dry ingredient and can be used in the dry mixture, perfect for a quick cake mix.
