But, if you not only want to stay on track all week with perfect macros, but have something ready to go when you need to run out the door you want to make these Keto Muffins!They package easily in a small container or plastic ziplock bag, and if you decide to eat them at work all you have to do is heat, cut open, add a tbsp of butter and you’re setting yourself up to be a fat burning machine!

So, when I say these muffins beat the cakes I am not joking in the slightest. In order to fully understand you have to make and try them – and I highly suggest you do!In terms of taste, both hit the spot perfectly with just the right touch of sweetness. However, when it comes to substance the Keto Muffins can’t be touched! They are dense, and pack more flavor in each bite. If you like biting into a slice of pizza, imagine bitting into four slices at the same time. Clearly, one is better than the other! Keto Muffins
Ingredients:
- 8 oz Cream Cheese
- 8 large eggs
- 4 tbsp Butter
- 2 scoops(62g) Protein Powder
Instructions:
- In a mixing bowl melt butter and cream cheese.
- Add whey protein and eggs, careful not to cook the eggs from the heat of the butter.
- Combine with a hand mixer until completely mixed.
- Pour into muffin baking tray and bake at 350 degrees for 26 minutes. Enjoy!

Yay! That is our favorite protein powder to use in them.
Ive tried making these twice now and both times the muffins have come out with giant air pockets in the middle. Basically I get a beautiful, delicious muffin top, and a thin horrible muffin-shaped skin around an air pocket that is 70% the total volume of the muffin. No idea what im doing wrong. Im following the recipe exactly except im using a classic metal muffin tin and normal paper cupcake/muffin liners.
We’re not sure what could be the problem, but we have been told by others that the protein powder and cream cheese may make a difference. Sorry to hear about your issue!
The exact same thing happened to me. I’m wondering if it might be the rotein powder. I’m going to order the kind that keto connect uses and try them again.

HI Matt, can I use coconut flour instead of whey protein? If so, how much should I use?
Ya you could us coconut flour, but the pancakes will be more crumbly. You will not need as much coconut flour as you would whey protein.

Is it possible that the batter was overmixed to where it was very bubbly before baking? You can try letting the batter rest for 10 minutes before baking.
Hello! Does the protein powder need to be something like this cookies and cream for these to taste good? Is egg white protein powder ok?
It doesn’t need to be cookies and cream – you can use any protein powder you have on hand. If the protein powder doesn’t have a flavor or any sweetener you’ll want to add some! You can even add cinnamon or a flavored extract.

Can I use plant based protein powder?
Yep
I’m going to try these as a breakfast option (don’t like eggs, ugh) and eating bacon daily is less than ideal. I have Vega protein powder and will try it with that. I have both chocolate and vanilla. I don’t like drinking the vanilla so I think i’ll try it in these muffins. Excited! Will let you know. I read that Vega is keto acceptable.

I’m not sure, but a few people have said this. I think it might be due to overmixing so the dough is too fluffy prior to baking.

Hi, you mentioned 62gr of whey protein, is it a total of 62gr in the recipe or is this the weight per scoop?

62 grams is generally 2 scoops of protein powder!
When you click on the link in your recipe for the protein, it takes you to one that has 29 grams per scoop, so 2 scoops would be 58 grams, not the 62 mentioned. Did you change protein powders at some point? Or is it a typo? Just curious as it probably doesn’t have much of an effect on the micros.

I made these and they taste great but were hollow in the center. Used a paper baking cup to bake would this be the problem?
It could be that or it could be that you over mixed the batter and had a lot of air bubbles prior to baking.
