We’ve made low carb truffles before, but they pale in comparison to these. This recipe was the result of Matt’s desire to make something over the top for Valentines Day this year because we have a tradition to cook a meal together and then have a dessert we can enjoy and feel good about afterwards. After I taste tested these truffles I fell in love with Matthew all over again and can’t wait to make these year after year!

Easy Chocolate Truffles
Five ingredients for your new favorite dessert recipe is a great bargain. You can even get a little wild and add in some finely chopped up nuts or berries to make them even more indulgent! With most of our recipes, just like this one, we like to give you a perfect base recipe so that you can tailor it to your and your family’s preferred taste. This easy chocolate truffles recipe is going to be a huge hit on Valentines Day and any other day you choose to make them!

Easy Chocolate Truffles
Ingredients:
- 4 oz Unsweetened Bakers Chocolate
- 1 cup Heavy Whipping Cream
- 1/4 cup Low Carb Sugar Substitute
- 20 drops Liquid Stevia
- 1/4 cup cocoa powder (for rolling - all will not be used)
Instructions:
- Finely chop up the entire 4oz bar of bakers chocolate and set aside.
- Heat a medium, bottom heavy skillet to medium heat and add the heavy whipping cream. Bring to a light boil and then remove from heat. Allow to cool for 1 minute.
- Add in the powdered erythritol, stevia and chopped up chocolate. Give it a light stir and then using an immersion blender, mix together the mixture until fully combined, uniform and you get a thick chocolate consistency.
- Pour combined mixture into a loaf pan and place in fridge for 1 hour and 15 minutes.
- Pour some cocoa powder out on to a plate for rolling the truffles.
- Remove the mixture from the fridge and using a 1 inch cookie scooper, scoop out 12 truffles. After you scoop each truffle out drop into the cocoa powder and roll to cover the entire surface and then place onto a separate plate. Repeat until all truffles are complete.
- Store in the fridge to re-harden prior to serving. Will keep for up to 5 days if stored in a sealed container. Enjoy!

Hi, I have done a lot of your recipes- ice cream is my favorite- but there is so much we can’t get here in the Uk.
The best cocoa powder I can find is 8.8g carbs and this is the same for most desserts. This stops me from fully following a Keto diet. I have lost weight but now have stopped as I think my body is use to the low carb diet. I only have a dessert once a fortnight. What can I do to kick start my low carb diet again

So how close are you to making keto hot fudge with this recipe? I’ve been jonesing for some hot fudge sauce.
What a good idea! Not sure if this would work for that but if you try it, let us know how it turns out! Maybe some additional liquid. Or you could try a ganache, that may be similar.

Hi… I tried your recipe following it exactly other than the addition of vanilla extract and cinnamon powder. After 3 hours in the fridge it wasn’t set enough to be rolled. Stayed a pudding consistency. Could the absence of butter have caused it as I noticed that your recipe does not contain butter unlike some others. I then added 2 oz. melted Hershey’s sugar free chocolate chips to the warmed up ganache as adding more unsweetened chocolate would have skewed the sweetness. After that I was able to roll the truffles…got 22 bite sized ones. Any other ideas for troubleshooting in future?
Our recipe firms up really well for us as you can see in the video. Not sure what went wrong for you. Perhaps leave it in the fridge overnight?
I wonder if I did the same thing. On their video they said 2 of the 4 oz bar of bakers chocolate, which would make 8oz of bakers chocolate. Then here on the recipe it only says 4oz of bakers chocolate. So I just made the recipe and looked at a few others that use 1/2 cup of whipping cream to 4oz of chocolate. I doubled the receipe and did 2 cups whipping cream to 8oz of chocolate. Now I am worried it won’t set up. Not sure which it is, 4oz to 1 cup whipping cream or 8oz to one cup whopping cream. If it is the latter I am in trouble……
What induction cooker do you use? And immersion blender.

Have you ever used silicone molds instead? I’ve made these before, but I was just wondering if it might be faster to pour into molds. Thanks! Great recipe by the way!!
Maybe, I am not sure if they would stick to the molds though. To get them round like a truffle, this way is best.
These truffles are gr8 but i pore them into a cup cake paper cup then set then i melt coconut butter with peppermint oil & heavy cream pore on top .Peppermint truffles.
Mine did not get hard ? Almost like whipped yogurt I did everything to the tee
I am not sure what went wrong unless you didn’t chill for long enough or used a different sweetener.
Absolutely delicious and by far the best keto dessert I’ve ever made. My boyfriend and his friends couldn’t tell the difference between these and the real thing – they ate almost the entire batch in one day!
The truffles tasted great was creamy but had bits of crystallized of what I think was the erythritol. Anyone else have the same experience? Maybe I did something wrong.
It’s the erythritol, it crystallizes. If you want you could add less erythritol and substitute with some stevia.
I love your recipes and your videos. One suggestion…can you use a QR code for you recipes for the ingredients and/or nutritional facts so they can be scanned into our carb counting apps…like carb manager? Just a thought.

I have a question. Is the Erythritol really needed here? Could you just replace it with a few more drops of stevia? What happens if you leave it out?
