Mini Loaf Experiment
This bread is the result of an experiment Matt and I performed one night. We already created an amazing keto bread using almond flour, but could it be done again with peanut flour? Well, spoiler alert – yes it can be!
Peanut flour was new in our kitchen so we wanted to really give it the full attention it deserved. That meant making five different mini loaves to see how it collaborated with different ingredients. One had peanut butter, two had coco powder, three had cream cheese, four had psyllium husk and five was standard with the peanut flour standing on its own. The winner, in case it isn’t clear to you by the title, was number three, the cream cheese loaf, so naturally we had to make it into a bigger 8×4 loaf!

Cream Cheese
The secret ingredient to our Cream Cheese Bread is… cream cheese! It not only keeps the bread extremely moist, but gives it a dense texture like you would get in a pound cake. It’s just the right amount of sweet and slightly tart. You can slice it up for breakfast with some butter or eat it for dessert. I’ve already made it three times in the past week and taken it to friends houses. It has passed the non-keto eater test!
Trust us, this is a bread you won’t be able to stay away from once you try it. Also, we’d like to take a moment to highlight peanut flour. It’s similar to coconut flour in that it’s highly absorbent so you need less altogether. But, we would definitely recommend it over coconut flour for baking breads. By using less to make an entire loaf you are taking in fewer calories – now isn’t that worth investing in?!

Cream Cheese Bread
Ingredients:
- 1/2 cup peanut flour
- 5 oz Cream Cheese
- 1/4 cup Butter
- 4 large egg yolks
- 2 tbsp Golden Monk Fruit
- 1 tsp Baking powder
- 1 tsp vanilla extract
- Pink Himalayan Salt
Instructions:
- Using a hand mixer combine room temp or melted butter and cream cheese throughly.
- Add golden monk fruit, yolks, vanilla, baking powder and salt. Combine well.
- Finally, add the peanut flour and combine until it forms a thick batter.
- Pour into a greased loaf pan and bake at 350 for 25 minutes.

No, I don’t think that would work.
I love baking and cooking for Keto. However I’m on a fixed income and the cost of this peanut flour is off the charts. What other flour can be used in lieu of the peanut flour and how much. I keep both almond flour and coconut flour in my pantry.
I think you can also use a peanut butter powder instead which you can usually find in the peanut butter aisle. It should be cheaper. I don’t know how coconut flour or almond flour would affect it or what ratio to use for substitutions.
Hi guys, I made your coconut flour bread last night (flavored with fresh rosemary and dried shallots!) and am excited to give the cream cheese bread recipe a try — but I keep thinking about this recipe for cottage cheese dill bread that my mom always made, and I’m wondering if it would be possible to utilize cottage cheese in a keto bread recipe to make it moister/tastier? Have you guys ever tried that or would you be willing to experiment to come up with one? Thanks — I’m a big fan of your site and just purchased your cookbook!
You could try it but you would probably need to blend the cottage cheese so it is smooth. It will also be more liquid than cream cheese. We haven’t tried this yet.

Monk fruit is a natural calorie-free sugar-free sweetener. You can sub with any sweetener of your choice!

Mine came out *super* flat. Just under an inch. What might I have done wrong? I added the baking powder. :/

can you use almond flour for this recipe?
Your best bet would be coconut and you’ll need less than the recipe calls for in peanut flour.
I am wondering if the peanut flour is fine like regular flour? I can’t eat anything w a grittiness to it.i have almond flour and it’s to gritty and I have a way to mill it down but it did not take all the grit out.i seriously need bread thanks a bunch

How much of a rise should i be getting and how long is mixing the egg whites into the batter too long. First time making bread and new to keto. Tastes eggy and not like bread

Its definitely possible – let us know if you give it a try using a muffin tin. Probably bake for the same time!
What would the ratio of coconut flour be for this recipe? I want to use up my coconut flour before buying peanut flour.
Unfortunately, all the flours are not easily substitutable. It would take some testing to figure out the right amount!
