Here comes round two of our favorite dessert recipe – Low Carb Chocolate Cheesecake! For those of you who aren’t fans of cashews(our first installment of these cheesecakes) or who love chocolate more we’ve created the ultimate low carb, keto-friendly dessert, and no baking is required!
I dedicated the first cheesecake recipe – Cashew Cheesecake – to my mom so this one goes out to the second leading lady in my life, Miley, our cat! Now, since she is a cat she can’t actually try the cheesecake and give a word play of what it tastes like so I am going to describe as she would.
Miley’s Favorite Low Carb Dessert
If Miley were a dessert she would be this chocolate cheesecake. Just like this cheesecake she has two layers, one really soft and sweet, and one hard and slightly bitter. The ratio of this cheesecake, 95% soft and sweet, also resembles Miley’s personality to a tee. You’ll love her to death on most days, but once every blue moon she’ll show you her “I’m hard and in charge” side.
Low Carb Chocolate Cheesecake
Just like myself, Miley loves how easy these cheesecakes are to make, but mostly how easy they are to eat! Like mother, like daughter. With the added bonus of not having to bake these anyone is capable of making them perfect every time. Compared to the cashew crust, this one has a harder bite to it and it’s also richer in flavor. The cocoa powder really comes through with the simple sweetness of the cheesecake filling!
This recipe would be labeled as a sugar free dessert based on the substitute sweetener we used, and we used Miley’s favorite – erythritol based on its 1 glycemic index!

Made this recipe. we loved it. I modified and made without crust using just cheesecake mix and froze in mini muffin tin with liners. when done used to cover in chocolate ganache. They were delicious chocolate cheesecake bites. Thanks a lot!!!

Just wondering in chocolate cheesecake the 5 star one there is no any form of cheese, why is it a cheese cake?

There is cream cheese in it. That is what most cheesecakes are made from.

Hi if I hAve almond flour how much of that would i use for the crust?

Almond flour is basically the same thing as almond meal so I would stick with the same amount

Hey guys,
I have a question. I want to make these cheesecakes and store them to eat 2 days later. Is it okay to store them in fridge once they are set in the freezer or should I leave them in freezer for two days? I don’t have a lot of experience with cheesecakes, so I am just wondering if 2 days in freezer will make them icy and hard to eat?

I think it would be better to take them out of the freezer once they are set and put them into the fridge to store until you eat.

I tried them today. Loved the cheesecakes but not a fan of the ganache. Tasted like I was biting into a bar of baker’s chocolate. Cheesecake was AWESOME though and I’ll be making these again! Thanks for a great video!

I do have a question about this recipe … if 1/4 cup of Erythritol contains 48 net carbs and the almond flour also contains carbs, how did you come up with such a low carb count?

We never include carbs from erythritol since they don’t spike blood sugar.

Hi, I’m a little confused. So or the crust you have nutritional facts listed and then for the cheesecake you have another nutritional fact listed. Is that for each? So for one bomb you would need to combine the nutritional facts? If not, what is the true carb amount? Thanks for your help.

I just finished making these and I have to say they were ok till I added a squeez of fresh lemon juice. I’ve always made a no bake cheesecake and have always put lemon juice so I figured I’d put some in this recipe. Wow did it make all the difference! I couldn’t stop tasting it lol!

We would recommend to just try doubling it pr tripling it to fit the required pan you are looking to fit.

I too can’t get erythritol locally. I have a big bag of Pyrure which is stevia and erythritol. Can I sub this at the same amount?

I believe it would be a 1:1 sub.

I realize this comment is very late haha but pyure is NOT a 1:1 sub for erythritol. It’s twice as sweet, which means in a recipe that calls for 1 cup sugar or erythritol, you need 1/2 cup pyure.

Hey there! Stevia in the raw generally has maltodextrin – a bulking agent – which is pretty anti-keto as it boosts your blood sugar. We wouldn’t recommend at all.
