Megha Did Play!
So let me let you in on a little secret… Matt and I do literally EVERYTHING together from our 5:30am workouts to cooking all our meals together and going out with friends. Since we live together we also watch all the same shows and then get into bed together at night. The point of me telling you all of this is to make it very clear that Matt being away was an exciting time for me. And, I’m sure he would express the same feelings if I were gone for four days!
What Did I Do
Aside from all the obvious things, such as standing naked in front of the fridge, singing loudly and dancing around with Miley in my arms, I also had a chance to create a video of Single Serve Keto Dinners for my KetoConnect fam! Although it was a lot work – setting up the lights, adjusting the camera and making sure I got all the rights angles – it was absolutely worth it! It also pushed me to spoil myself a little and make meals that I was specifically craving.
To make it easier for all of us, on the first night Matthew was gone I cooked up a pound of grass-fed ground beef. This acted as the base of my single serve meals on all three nights! Are you ready to see what I made for you?!?
Night One
On night one I went all out and made a single serve Cauliflower Mash Shepards Pie. I’d never had one before that night, but it was definitely in the top foods I’d been wanting to try. Luckily, it was a quick put together because I got home late and I was ready to chow down!! I opted to use celery and carrots in my meat portion and keep the cauliflower mash simple with some salt and pepper.
The best part about this meal is that you can add anything you want to enhance the meat – peas, onions, corn, squash – which means you can use whatever you have in your fridge! Is something about to go bad? Throw it in. Did you find something you forgot you had in there? Throw it in. You don’t have time to grocery shop? Throw in whatever you have in the fridge! See what I mean? Before I put it in the oven I topped it with cheddar cheese (you can use any cheese you like!) and baked it in the oven at 350 degrees for 20 minutes. Doesn’t it look delicious??
Night Two
On night two I came home late again and was exhausted so I knew I was going to make a quick, simple dinner. Luckily I had all the meat prepped so I only had to heat it up. The lettuce wrap tacos I made were not only easy to put together, but were packed with flavor and perfectly fit into my macros for the day! Another plus is that they photograph well ?
Night Three
Fridays I work half days so not only did I have all the time I needed to cook a lovely, final, single serve keto dinner for myself, but I could enjoy it all with some wine! And, to be honest, before I got home I knew what was on the menu because the night before as I was browsing Pinterest I saw a picture of spaghetti and I was SOLD!. We always have Shirataki noodles in our fridge and I hadn’t used them in a while so I thought how perfect! They are very low carb and low calorie, and if cooked properly they taste great!
I used the rest of the prepped beef and combined it with tomato paste and cream cheese. Once it was all combined I added some water to make the meat more of a meat sauce. After drying the noodles and heating them in a pan I topped them with the ground beef and had a lovely single serve pasta dinner!

Single Serve Keto Dinners
Ingredients:
Cauliflower Mash Shepards Pie
- 2 tbsp Butter
- 3 ounces ground beef (we use 80/20)
- 1 handful white onion (optional)
- 1 handful carrots (optional)
- 1 handful celery (optional)
- 2 cups cauliflower chopped
- 2 tbsp Parmesan cheese
- 1/4 tsp Pink Himalayan Salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
Instructions:
Cauliflower Mash Shepards Pie
- Add 1 tbsp of butter along with handful of chopped onions, carrots and celery to a medium heat pan. Cook down until veggies are soft/translucent.
- Add in 3 ounces of cooked ground beef and garlic powder and combine well heating through completely. Set aside.
- Place 2 cups of chopped cauliflower into a processor and add parmesan cheese, 1 tbsp melted butter, salt and pepper.
- Process multiple times, using a spatula to push down the mashed cauliflower between processes.
- Layer beef mixture into a small single serve bowl (oven safe!) and layer the cauliflower mash on top.
- Sprinkle with cheese and bake in the oven at 350 degree for twenty minutes. Enjoy!

Single Serve Keto Dinners
Ingredients:
Lettuce Tacos
- 3 ounces ground beef
- 3 large lettuce boats
- 1/4 cup cheese
- 1/4 cup guacamole
- 3 tbsp sour cream
Instructions:
Lettuce Tacos
- Separate out three big lettuce boats.
- Heat 3 ounces of cooked ground beef and sprinkle one ounce into each of the three lettuce boats.
- Layer with cheese, guacamole, sour cream, onion and tomato (all optional). Enjoy!

Single Serve Keto Dinners
Ingredients:
Pasta with Meat Sauce
- 1 packet Shirataki Noodles (2 servings in packet)
- 3 ounces ground beef
- 1 ounce Cream Cheese
- 1 1/2 tbsp tomato paste
- 1 tbsp Water
- 1/4 tsp garlic powder
- 1/4 tsp Pink Himalayan Salt
- 1/4 tsp pepper
Instructions:
Pasta with Meat Sauce
- Dry off Shirtaki noodles with a paper towel.
- Heat noodles in a pan over medium-high heat for 10-12 minutes.
- Heat 3-5 ounces of ground beef in a skillet over medium heat and add the cream cheese, tomato paste, garlic powder, salt and pepper. Combine well.
- Add water to meat to create a sauce consistency.
- Top the noodles with the meat sauce and enjoy!

There should be more recipes for 1 person. A lot of people want to do the keto diet, but the recipes are for more than 1 person.

No, it was fresh.

Cauliflower for mash is best steamed in a microwave for about 6 minutes instead of boiling.
Tastes much better and doesn’t get waterlogged.
Blender is best if you like it really smooth.
Salt and white pepper seasoning “for me”
+ a dash of double cream to help blending.

Perhaps I didn’t cook the shiritaki noodles correctly the last time I used them but I did not like them. What I use instead is lightly sauted zoodles! Love them and it gives me a boost of nutrition.

My hubby will be going hunting soon for 10 days……. These 3 meals, plus the $5. a day meals will greatly help with my small budget for that time. I’m in Ontario Canada so prices are higher but will still be great budget meals here.
