I used to eat a Nature Valley Granola Bar everyday for breakfast on my way to school so these Low Carb Bars bring back all the great memories of my childhood! We used simple, whole ingredients to recreate our favorite high carb bar and nailed it on the first try. This recipe was inspired by Stoka Bars so definitely check out their products if you’re looking a quick grab and go snack.
How Do These Hold Up To Other Low Carb Snack Bars?
You may be asking yourself the question of how these compare to pre-packaged ones. Although ones you can buy online or in store may have the convenience factor that these don’t because no baking is required, the ingredients and macros are a little questionable. Let’s take a look:
- Quest Bars use a lot of fiber and are higher in total carbs.
- Atkins Lift Bars also use a lot of fiber along with sucralose for the sweetener.
- Keto Bars are going to be your best option, but they still use a little more erythritol than we like to see.
That all being said, if you take just a little time over the weekend to make a double or triple batch of these low carb bars you will not only have a great snack for the week, but you can pack them in your kids’ lunch boxes! You’ll know exactly what is going into these bars and you’ll feed great about eating them.Overall, these bars are lower in carbs (most of them coming from whole ingredients) and they will satisfy that crunch craving that no other bar can.
Nature Valley Granola Low Carb Bars
You don’t need to use the granola bar mold we did unless you also want the true feel of a nature valley granola bar. Fat bomb molds or muffin molds will work great and give you little bites of heaven! The goal of this recipe was to replicate the delicious Stoka Bars, which lists Butter Powder on their packaging as an ingredient. If you don’t want to purchase this ingredient, you can try substituting with the following ingredients.
- Powdered peanut butter
- MCT Oil powder
- Butter
- Ghee
- Coconut oil

Low Carb Nature Valley Granola Bars
Ingredients:
- 1 cup almonds, raw
- 1 tbsp psyllium husk powder
- 2 tbsp butter powder
- 2 tbsp Low Carb Sugar Substitute
- 1/2 tbsp coconut oil
- 1 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 20 drops liquid stevia
Instructions:
- Preheat your oven to 275 degrees F.
- Add everything to a food processor and pulse until you have chunks of almonds, but everything is combined.
- Spoon the mixture into your mold and press it down very firmly using a spatula.
- Bake for 30 minutes, until edges are browned. Allow to cool for 15-20 minutes until set.

I made these and the taste is awesome. (I bought the silicone bar pan and the butter powder specifically for your recipe).
They do seem a little crumbly. Would adding another binder ingredient make them sturdier?
Perhaps! Maybe pushing them down more firmly into the mold will help even more as well.
While I impatiently wait for these to cool, I wanted to ask if you guys could do a blog post on how to use butter powder (e.g., how much, dry or wet) in your other recipes. I accidentally had two in my amazon cart so unless I plan on using your recipe to put stoka out of business, I need ideas on how to use it up. Thanks in advance!
We may start trying to use it in more recipes, it’s basically a way to add butter to something that you want to be shelf stable! So fat bombs is your best use!
I was able to get the powdered butter and played around with it.
Clearly, regular butter cannot perform the same way as powdered butter since the powdered butter provides fat without the liquid.
Hey, guys! While I was waiting for my powdered butter to arrive, I gave this recipe to a friend who made it and brought over a sample. BE STILL MY HEART! This little treat is, as you said in your video, the best thing ever! She used powdered peanut butter (which I’m not crazy about) but I couldn’t even taste it. I can’t wait to try it myself with the powdered butter. It couldn’t possibly be better than what my friend brought over. And it didn’t even have chocolate in it!
i am going to try the “Keto Perfect MCT Oil Powder” Unflavored for this. I think it will work – I’ll let you know.

I plugged everything into my fitnesspal, and used almost all the same supplies that you used for 4 bars. My nutritions came out really off.
Cal= 203
Fat: 17.8g
Carbs= 14g
Fiber=4.6g
Protein=6.3g

Yes I did, I plugged everything in my fitnesspal and that’s the micros that it came out to for 4 bars. It’s way off compare to the original recipe 🙁
what are your thoughts on the protein bars from Costco (the Kirkland brand) that are low carb? they subtract the sugar alcohols as well as fiber to get the net carbs which are 3-4 g /bar. Do you usually subtract the sugar alcohols and does it cause an insulin response?
We always subtract sugar alcohols from erythritol since they don’t spike blood sugar. We think the Kirkland Signature protein bars are a good option, they are similar to Quest, but cheaper which is great! Make sure to read the label, we have seen some Kirkland protein bars sweetened with maltitol, which is not good for keto.
I tried this but mine completely crumbled. Couldn’t even take it out of the mold after 30 minutes. What do you think is wrong?
Did you use butter powder?
Mine did the same thing, after taking it out of the oven and letting it sit for 20 mins 🙁

I went ahead and bought the butter powder.
The way I look at it, there are so many awful ingredients for everyday foods, that our cupboards get overrun by trash.
I would much rather buy something for $20, and have it on hand to make certain alternatives instead.
So, every week, just buy something different to add to the pantry.
Then it’s not as much of an budget breaker.
And then when you go to replace items, it’s not a $300 haul.
That’s why I love Amazon, Walmart Grocery and Sam’s Club Pickup.
After a long day at work, I can go home and grab what I need, and be done with it.
And on Sunday, do meal preps!
We have the time, and most of the time, the money. We just have to determine what sacrifices we want to make to do it.

Could peanut butter powder be used instead of butter powder?
I used PB2 in it. I didn’t have the mold and subbed in different nuts and they crumbled. I think it may be that I didn’t process it enough though. It ended up be a delicious, nutty granola, lol. I would definitely make it again though and don’t think the issues came from the PB2.
What can i use instead of liquid stevia? We don’t like stevia in any form.
You could try liquid monk fruit!
Love you guys n so many of your recipes. Butter powder – meh – I’ll find it somewhere or do the cocoa powder thing or something. My question is about stevia. Why stevia? I HATE stevia. It leaves such a bitter aftertaste. And a lot of recipes call for it as well as erythritol. Why both? I haven’t tried a lot of desserts n fat bombs (I also prefer savory to sweet) so I’m not sure if eliminating it is an option. Whatcha got for me?
We find liquid monk fruit doesn’t have the bitter after taste. We do half and half of stevia and erythritol because some people have digestive issues with erythritol, and we want to cut back on the bitter stevia taste. You can do all erythritol if you want.
I just made these today, triple batch. I did 2 cups almonds and one cup pecans (because they are delicious). Had to try them before the cooled and they are ready good! I don’t have molds so I just pressed the mixture together on a baking sheet and scored it, worked great!
Is erythritol included in total carbs? It wouldn’y seem so… it’s an important information for quite a lot of us, many bloggers have started to count its amount by itself… it would be appreciated if you could do this effort in nutrition facts of your great recipes, thank you if you’ll consider this point 🙂

We recommend just inputting all the ingredients you used into MyFitnessPal and going with that. We subtract the erythritol carbs.
Thank you for all your recipes;they are Great! What is your thought on the Kirkland Protien Bars from Costco? I love the chocolate chip cookie dough and it is a good snack on the go.
If they are sweetened with maltitol, which we think they are, then we wouldn’t advise those. Maltitol spikes blood sugar almost as bad as regular white sugar.

Is the powdered peanut butter ok to use?
Someone has replaced the butter powder with melted crunchy peanut butter and found success! You could try that if you are okay with the peanut flavor.
