Chorizo Dip

Ingredients

  • 8 oz chorizo
  • 1/3 large white onion, diced
  • 2 cups cauliflower, roughly chopped (half medium head)
  • 2 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 cup monterey jack cheese, shredded
  • 1/2 cup cheddar, shredded

Instructions

  • Heat a large, oven-safe skillet to medium high heat and crumble the chorizo into the hot skillet.
  • Break it apart using a spatula to brown all over.
  • Once the meat is cooked down add in the onion and cauliflower.
  • Once the cauliflower and onions are tender, add in the cream cheese and sour cream. Combine using a spatula.
  • Remove skillet from heat and top with cheese.
  • Turn your oven to broil and place the skillet in the oven for 1-2 minutes until the cheese has melted to your liking.
  • Optionally, top with avocado, sour cream and jalapenos and serve warm with pork rinds or veggies as an appetizer or for dinner. Enjoy!
  • Store leftovers in a sealed container in the fridge up to 5 days.
